Hidatsa red beans are semi-climbing, productive, and grow large pods containing between 5 to 7 beans. This variety was originally bred by the Hidatsa tribe in the Missouri River valley, in North Dakota, USA. It was then introduced to the wider public by Oscar Will, a horticulture pioneer, in 1915.

The ice plant comes from South Africa. Its foliage, which looks covered with frost or dew, is nicely tangy. The leaves can be eaten raw in salads or cooked in butter. Its tiny flowers are dainty and quite unique. Easy to grow, doesn't require much but will be killed by freezing temperatures.

High-yielding bush bean producing shelling beans of a beautiful matte white color. They were given to us by an Iroquoian collector, but we were not able to retrieve its origin. The variety is mentioned in an old New York catalog, but it is described as a climbing variety. We do no have further informations. A rarity!

This Batavia head lettuce has light green leaves, sprinkled with red dots. They are slightly wavy, reminiscent of a jester costume, which explains the name. They are also crispy and delicious. The plant itself is very hardy, and resistant to bolting. This allows for a longer harvest with delayed planting.
This variety was developed by Frank Morton in Oregon, who made a triple-cross between the “Reine des Glaces”, “Merlot”, and “Flashy Troutback” varieties. It was selected for both its visual and eating qualities.

Historically in Quebec, lamb's quarters were eaten when other food sources became scarce. When spring took a while to show up but the root cellar was already empty, people would harvest young shoots and leaves to make a highly nutritional soup nicknamed "fat-hen soup". Of course there was no hen or chicken in this soup! The cook's pride was saved.
Annual edible plant from the Amaranthaceae family. The nickname 'fat hen' comes from the similarity between the leave shape and poulty feet. Gradually, Chenopodium album conquers wasteland, gardens, fields, and even continents. It's everywhere! This "weed" nonetheless has several interesting properties.
It's very rich in calcium, proteins, vitamins A, B and C, phosphorus, and iron. Usually, the young leaves and stems are harvested for eating. However, just like spinach, lamb's quarters are rich in oxalic acid, so it wise to not eat it in every meal. The seeds are also edible, but again should be eaten with moderation as they contain saponins.
Easy to freeze and to throw in several recipes. To try in pestos and soups.
The name "chou gras" in French is at the origin of the common expression "jeter ses choux gras" (throwing away its choux gras), meaning to be wasteful.
