When it comes to common purslane, saying "ancient vegetable" is an euphemism; purslane was known by the Egyptians 4000 years ago. It was then, like many other plants, "forgotten". It is nonetheless making a comeback on our market shelves thanks to market gardeners growing ancient varieties. In a salad or mesclun, purslane is eaten fresh. Its leaves are tender and filled with omega-3 and antioxidants. It is also emollient, detoxifying, diuretic, and laxative if eaten in large quantities. Chewing on a couple leaves will soothe gum inflammation and mild sore throats.

This vegetable thrives in the cold. Therefore, it should be sown early in the spring, or at the end of summer, in an compost enriched soil. Its leaves are allegedly as rich in beta-Carotene as carrots, and a good source of vitamins A and C, and of iron.
We produce 95% of our seeds on our farm. Unfortunately, cornsalad seeds are hard to produce in Quebec. These seeds were thus purchased from an organic seed saver in the United States.

Garden cress is a small, fast-growing plant with a spicy and peppery taste. It mixes well in a salad. The wavy leaves are also used to enhance dishes containing meat and vegetables, as well as soups. Originally from the Middle East, it is very easy to grow is watered sufficiently. A wonderful discovery for us!

This variety grows since 1972 in the Portneuf area, thanks to Miss Nicole Groleau. Its leaves have a rich and spicy taste which will give a kick to your salads and sandwiches. It can be harvested all summer long, or if you prefer to constantly harvest young leaves, you may sow it successively every 2 weeks. This crop is very vigorous and needs very little care, except for a regular waterings.

This spinach variety is hardy and slow to go to seed. Its large triangular leaves can be eaten raw or cooked. They can be harvested as you need, as it is recommended to consume them shortly after harvest. However they can also easily be frozen.
Can be sown at intervals if you prefer baby spinach.

This spinach variety is very rare. It comes from a convent, the Congregation of the Sisters of Providence of St. Vincent de Paul in Kingston, ON. These sisters grew over 400 different cultivars of vegetables, fruits, and herbs. They're offered us some treasures that have been grown for over a century. Native to North America. The strawberry blite is one of those forgotten vegetables that are making a strong comeback to our gardens. It is grown both for its leaves that can be eaten raw in a salad or steamed, and for its red berries. Although, do not be mistaken: despite their appearance and the name, these berries taste more like beets than strawberries. The fruit should be eaten in moderate quantities as the seeds contains some toxic compounds. The fruits were also used by Native Americans to make a red dye.

Tetragon is usually grown for its leaves, which can be added in salads or cooked. Thanks to its ability to withstand difficult climates, this plant grows readily in the wild in China, Reunion Island, and New Zealand. It is also fairly easy to grow in Quebec, but it will behave as an annual since it cannot tolerate frost.
Held up by a round stem, tetragon has a really unique look with its thick leaves and quadrangular fruits. Good source of vitamin B1, B2 and C; the New Zealand spinach is both delicious and nutritious!
