Thyme

Essential in any garden, thyme is an herb originally from Eurasia. Perennial and hardy, key ingredient in Provencal spices, melliferous, the list goes on as to why this plant is so valuable in a garden. Egyptians and Etruscans mixed thyme in with their ointments to embalm their deceased. Greeks would burn it in front of altars and houses because they believed it had purifying properties. In the language of flowers, thyme is a sign of bravery, long-lasting love, creativity, dynamism, and physical resistance.

In infusion, with a bit of lemon, it is said to be a miracle cure for minor respiratory infections. Thyme also has stimulating, desinfecting, expectorant, digestive, and several other properties, making it a great ally for the winter.

Sowing : In a container, put outside after the last frost
Depth : Lightly cover with soil (less than 1 cm)
Germination : 10 to 15 days
Soil : Light, sandy, well-drained
Exposure : Sunny
Plant spacing : Thin out at 20 cm
Row spacing : 20 cm
Watering : Water regularly on the first year, it will be okay by itself the following years
Care and other considerations : At the end of winter or in early spring, cut back the plant by removing 1/3 of the height

Evergreen Bunching Onion

Allium fistulosum

 

Cibol, Welsh onion, Japanese bunching onion, bunching onion are all different names of this perennial onion. Extremely cold-hardy and prolific, it deserves a spot in a permaculture garden. It requires very little attention but will give you entire satisfaction.

scorzonera and salsify, Roots & Tubers
Black Salsify
Scorzonera hispanica Black salsify or Spanish salsify is a vegetable cultivated for its long black skinned taproot. The name Scorzonera derives from the Italian scorza (bark) and nera (black). As we might be able to guess from its yellow flowers, the plant belongs to the Asteraceae family. Just like the root, the leaves are edible and so are the flowers before they open, like small broccolis. The white fleshed root may be harvested during the first or second year. To develop up its full potential, the plant needs to grow in a soil deep enough. If you let it overwinter in the ground, even here in Quebec, the plant will produce flowers the following year. Once they are ripe, it will be time for you to harvest the seeds, but beware : birds, and especially goldfinch, love them! Black salsify is rich in carbohydrates, minerals and vitamins.

Lovage
Perennial aromatic and medicinal plant belonging to the Apiaceae family. Just like carrots, it can be eaten. Its flavor resembles parsley or celery. The name lovage is from "love-ache", ache being a medieval name for parsley. It has a variety of culinary uses. Dried, the leaves will replace laurel, and scots lovage salt can be used instead of onion salt. Flowers and seeds are edible. Leaves, stems and roots can be eaten raw or cooked. The umbels are borne on stems that can reach 2 meters tall. Often found in the gardens of New France colony. When archaeologists find traces of this tenacious plant, they know they discovered an old settlement. It was widely eaten in Europe to fight scurvy and as a food source. In the Middle Ages, it was recommended to grow this plant in the vegetable garden. It was also largely used in Ancient Roman cuisine.     Package: 20 seeds
