Valerian

This pretty medicinal plant flowers on the second year. Its flowers are white with a slight touch of pink, perched on a stalk that can reach u to 1.5 m, and won’t fail to attract pollinators. Very hardy, it can survive to temperatures as low as -35 Celsius degrees. The roots can be harvested in the fall on the third year.

Some use its roots in decoction as a natural alternative to synthetic sleeping and anxiolytic treatments. Indeed, its sedative and muscle relaxing properties have been celebrated by many for a long time. Its smell and strong taste might throw some people off, in which case you might want to consider mixing it with another plant such as lavender or lemon balm to soften the taste. Young valerian leaves can also be eaten, for example in a salad.
