Garden chervil, highly prized in Europe, is a biennial plant characterized by its finely cut leaves with an aniseed flavor. Ideal with potatoes, eggs, and fish, its delicate taste requires gentle cooking, added towards the end of preparation, or consumed fresh in salads. Its flowers and roots are also used to flavor dishes. To best preserve its flavor, it is recommended to freeze chervil rather than dehydrate it.

Clary sage is a perennial condiment and ornamental plant very honey-rich with white flowers tinged with purplish blue. It is used like sage officinalis but it is preferable to use the clary with the officinalis in long cures. In popular medicine, the leaves are used to heal wounds. It has been cultivated since ancient times for its medicinal properties. However, you have to wait until the 2nd year to see it bloom and see the carpenter bees and the gassed sphinxes who adore it gorge themselves with nectar.

Its leaves can be harvested throughout the beautiful season.

Despite its name, the royal nettle is not a nettle! It is a false nettle, easily recognizable by its square stem and the presence of a swelling beneath the nodes (at the leaf insertion points). It is hairy but not stinging. It can reach up to 80 cm in height and has purplish (pink) flowers, speckled with yellow or white. They are grouped together and form a crown of spines: this is the calyx. Flowering occurs from July to October. Like the rest of the nettles (true or false), it is a undemanding plant: it is found in hedges, clearings, along paths or even in fields.

Green Mitsuba, also called Japanese parsley, is one of the rare vegetable plants growing in the shade. This fine Japanese herb is eaten like parsley. All parts of the plant are edible. Beautiful perennial, aromatic and medicinal plant with a bushy habit. Hyssop is used in the composition of the famous ''Herbes de Provence''. Its small shiny green leaves can be used fresh or dried as a condiment. The ideal way to keep them dried is to cut them before flowering. Its delicate flowers form beautiful deep blue spikes which can also be eaten fresh in a salad, or as an infusion. To make the most of their aromas, it is interesting to cut them at the start of flowering. Very melliferous and appreciated by pollinators.

Lemon balm is a plant native to the eastern Mediterranean basin (Turkey) and found in all temperate climates on the planet. It exhales a sweet lemony scent when its leaves are crumpled. It is used in herbal tea, fresh or dried. The leaves, stems and flowers are the parts used. Lemon balm is a plant known since ancient Greece and used for its benefits against stress, insomnia and overwork. It is known to have antispasmodic, antiviral, digestive properties and effectiveness against anxiety.;Caution Lemon balm seeds require cold and moist stratification before being sown.


MAINTENANCE AND OTHER CONSIDERATIONS:
Cut the flowers before they produce seed. This will prevent seed dispersal. Lemon balm can become invasive by spontaneous sowing. Sow indoors at the end of March. This plant requires cold stratification in moist sand at least 2 weeks before sowing.

A refreshing twist on classic basil. Add a lemony kick to your favorite salads and dishes. Lemon basil is best used raw or at the very end of cooking to retain its flavor as much as possible.

Aromatic and melliferous plant indigenous to Europe, the meadow sage sports abundant flowering that you will appreciate as much as the pollinators. An accommodating plant, it thrives in sun or partial shade and tolerates rather dry soil. Its leaves have multiple uses both medicinal and gustatory.

This mint has a strong and refreshing taste. The leaves are used dried in herbal tea. Native to North America. Big advantage: it is not invasive like other mints. It can grow in a rockery, in poor soil, and requires practically no care. Its flowers are white and its leaves delicate.
